Equipment

Paella Ingredients

2 1/4 cupbomba rice
3/4 cupwhite wine
1350mLchicken stock
3 pinchessaffron
4bay leaves
2Chorizo sausages, cured (sliced)
6chicken thighs or drum sticks (chopped)
12mussels
12prawns
halflemon (sliced for garnish)
1/4 cupparsley (for garnish)
1 tablespoonolive oil
to tastesalt and peper

Sofrito Ingredients

QuantityIngredient
1onion (finely diced)
4garlic cloves (thinly sliced)
1bay leaf
1tomato (finely diced)
1 tablespoonolive oil
to tastesalt and peper

Paella Recipe Instructions

Make the Sofrito

Saute all of the ingredients over medium-low heat for 1 hour or until the tomatoes turn a dark red colour. Set aside. I recommend doing this ahead of time on the stove top using a regular saute pan as it’s a more efficient use of heat
